San Valentino cured ham is made only from the hams of Italian pigs raised according to PDO certification requirements. The hams are deboned while still fresh, before they are salted, to promote the evaporation of moisture while preserving their consistently high quality.
Provenance: pigs born, reared and slaughtered in Italy, in accordance with PDO requirements.
