To continue to guarantee authentic specialities of Italian cold cuts, in 2020 we acquired a ham factory in Collecchio, in the heart of the Parma area, renowned for Parma Ham D.O.P. Traditional wisdom, innovative creativity and gastronomic inspirations are born from the territory. Here, in the heart of Emilia-Romagna, genuine and quality products take shape, the result of a tradition that combines taste and competence.

Selection of raw materials and quality

Each phase of the processing of Golfera raw hams is guided by the search for the highest quality. For this reason, our experts follow the production process step by step and ensure that each product meets high quality standards. The origin and the territory in particular count from the first step: the choice of raw materials. Suffice it to say that 90% of the pork comes from carefully selected Italian farms, half of which are in Emilia-Romagna. We also prefer medium-small suppliers within 100 km of Collecchio, to maintain a close link with tradition and guarantee the highest quality.

In the Collecchio plant we produce the original San Valentino, Parma hams D.O.P. in various formats and weights and the sweet or smoked Cuor di Fesa, obtained from particularly lean thighs. A complete assortment that meets the different needs of the market, faithful to the tradition of Parma Ham and linked to the historical processes signed by Golfera.

San Valentino, at the heart of tradition

In addition to our Parma hams D.O.P, among the excellences of Golfera production in Collecchio, the San Valentino ham stands out. The latter is distinguished by its unique and meticulous production process, which has been perfected over decades with fundamental characteristics and steps:

  • 100% Italian meats
  • Boned when fresh, before salting
  • reduced manual salting, to enhance the sweetness
  • unique aromatic bouquet
  • aging in a controlled environment

The result is a ham with a full and harmonious flavour, which represents the perfect synthesis of tradition and craftsmanship.

Cuor di San Valentino: the culatta with a sweet and fragrant taste

Cuor di San Valentino is a culatta with a distinctive shape, aged 12 months and obtained from the processing of the most prized part of the ham, with a natural soft, sweet and fragrant taste. Each phase, from the selection of the thighs to the aging, is designed to preserve the authenticity of the flavour and the delicacy of the meats. The result is a cured meat that tells of our land in every slice, the heart of the ham par excellence.
