Many operations, for example, are manual: each piece is stuffed and tied by hand just like in the old days. A care that is combined with innovative technologies and that preserves its iconicity. The control of the entire production process then ensures a quality cured meat, suitable for those looking for taste and balance at the table.

The Quality of Raw Materials

To produce Golfetta, we choose only meat from pigs born, raised, and slaughtered in Italy, with a weight of over 130 kg and belonging to the “Italian Heavy Pig” type.
